Kyoto Prefecture
On the island of Honshu, the once-capital of Japan, Kyoto is known for it's matcha, a wealth of production knowledge and the unique flavour this region brings. Located on the western region of Japan, it is known to be the matcha capital of the world. In particular, a town called Uji is known to grow tea leaves rich in umami and complex flavours.

Mie Prefecture
Located on the east coast of Japan's Kii Peninsula, Mie is part of the Kansai region and borders well-known places such as Aichi, Nara and Kyoto. It is home to some of the holiest Shinto shrines with the Suzuka mountains to the north-west and Nunobiki Mountains.
Mie experiences temperatures differences over the year and even daily over their first harvest season. We have been told the seasons are important for the plants to hibernate over winter, holding the nutrients so that when Spring arrives the sweet and umami flavours produced are unique to them. With their soil being located at the bottom of the mountains and natural water running through them it is a rich soil that has a deliciously sweet flavour and aroma to it.

Standard Matcha
Introducing a new matcha for lattes, specialty drinks and baking. Kansai region is on Honshu island and includes Kyoto, Mie, Osaka, Hyogo, Nara, Shiga, and Wakayama. It is a blend of mixed harvest green tea from Spring to Autumn. For a strong matcha flavour, that still has a green colour. Highly recommended as a blend with flavours, sugars, or sours to complement its earthy astringent aromatics.

Superior Matcha - best for tea
Our highest-grade matchas' are complex in flavour and light in astringency. These are the youngest and first harvest leaves, highly coveted by tea connoisseurs and matcha purists.
Superior matcha is best enjoyed as a tea, to savour and appreciate the flavour in its entirety. We are now offering two from Kyoto and another from Mie, in Japan.
Choose Superior if you want to taste matcha at it's highest quality as tea. Still enjoyable as lattes but with a lighter flavour due to the mixing of your choice of milk. We recommend to use in raw foods only to make your moneys worth, but know that some bakers prefer the Superior matcha taste and colour profile. It is up to you at the end of the day.
